Arugula is in season right now. Personally I love the taste of it,and I try many recipes with it. This pesto was delicious, and my biggest critic, my husband, likes it too.
Notes: One of the ingredients is white miso. Miso is a fermented soy bean product available at local health food stores, (Wrights on 19 N, just above Main St. and also at A to Zinc, in Plaza on 19 and 52).
Miso should never be boiled as it has digestive enzymes in it to help promote a healthy intestinal track. Also because it has digestive enzymes, it you taste it don’t use the same spoon to put back in the pan because the enzymes in you mouth will work against the miso.
Orecchiette is small elephant ear shape pasta, but you can basically use any pasta is you can’t find Orecchiette.

I was inspired by a local grower and Suncoast Co-op member who was in a quandry in what she could do with her abundance of okra she was harvesting so I made it my mission to seek out a recipe different and new by using okra as the main ingredient. I’ve enjoyed the muffins and I hope you do too.

When I was on a roll making Okra muffins and had okra that I wanted to use I decided to try a recipe I found for Cinnamon Okra Oatmeal cookies. What I like about this recipe is that it is very adaptable. My next batch I want to add organic raisins or cranberries and although they are not overly sweet I may try reducing the amounts of brown sugar as I am a firm believer of less is better when it comes to sugar and the raisins or cranberries will give it some natural sugar. When I do, I’ll be sure to add some additional comments below the recipe.

This delicious potato dish is a combination of mashed potatoes, cooked cabbage, and optional green onions. When I made it for the first time this year, I used my collard greens!
This is a great dish for St. Patrick’s day, or enjoy it as a side dish to ham, roast beef, corned beef, or sausages (if you eat animal products…). It’s easy to prepare and wonderful any time of the year.

Growing up in the north the only way in which winter squash and rutabaga(hubbard, buttercup and butternut) was served was cooked to death, drained and mashed with butter and cream. And it was always served only in the winter. Yes, it was great but whatever vitamins, and taste, went down the drain with the water. Here, root veggies can be had all year.
I usually mix whatever winter squash and other root vegetables I have on hand. This time I used Red Kuri Squash.
Amounts will vary; judge what you will use individually and multiply as needed for more people. The amounts below are what I use for myself and usually have leftovers for another meal.

I was trying to figure out what I could do which would be quick but I also wanted something warm so I decided to make up an untraditional spinach salad but I needed a dressing. I was leaning towards something asian so I decided on making a peanut sauce and because I had tempeh on hand I added it to give me some protein.

This salad gives you a good serving of fiber, calcium, B1 and B3 plus it is low in fat and calories. It’s tasty and easy to make. Serve as a meal,with a sandwich, or with a main entree. I served mine with Suncoast porkchops from naturally raised pork but it would go well with the naturally raised chicken and beef the co-op offers for purchase too. You can also make this a vegan meal by eliminating the cheese. Enjoy
